2 chicken breasts - cooked and shredded
1 cup arugula
1 stalk of celery, diced
1/4 cup golden raisins
1/4 cup plain yogurt
1/4 cup mayo
2.5 tsp curry powder
freshly ground black pepper, to taste
Combine all ingredients. Ideally refrigerate overnight - this allows the raisins to really plump up.
